Roselle (Hibiscus) Syrup
What you need:
Handful of fresh roselle flowers
Water
1 cup of sugar or honey (preferably coconut sugar or raw honey, but anything will work)
Method:
Simmer a handful of roselles in a few cups water for around 15 minutes then allow them to steep in the water for several hours or overnight.
Remove and add sugar or honey to taste - around 3/4 cup for 1 cup of liquid.
Allow to cool then refrigerate.
Now you have a syrup/cordial/squash you can mix with soda for drinks, flavour kefir water, use in desserts or for Christmas, add a little to your cranberry sauce...
I added some to a little water kefir then froze it into lolly moulds for the ultimate probiotic popsicle!
