Do not expect a list of wholesome ingredients forthcoming, but do expect your kids to ask for seconds! If you want to make this for adults too, I would halve the barbecue sauce and add chilli flakes to one half, then paste this onto one half only of the ribs leaving the other side non-spicy for the kids. The ribs are slowcooked for 4 hours in the oven, but other than that, the prep is very quick and straightforward.
What you need:
1 rack of baby pork ribs weighing 2lbs. We used Spanish duroc baby pork ribs from Jett Fine Foods.
1 teaspoon of salt
1 tablespoon of vegetable oil
4 tablespoons of rub. We used the Memphis dust recipe from Amazingribs.com or you could just buy one.
Barbecue sauce
1 cup ketchup
1 tablespoon brown sugar
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
1 tablespoon cider vinegar
1 clove minced garlic
1 tablespoon of chilli flakes (for the adults only perhaps)
Method:
Preheat the oven to 105C.
Take your ribs and remove any membrane from the back.
Sprinkle half a teaspoon of salt all over the ribs.
Paint them with 1 tablespoon of vegetable oil to form a base for the rub.
Rub 4 tablespoons of the rub into the pork then place on a grill in a baking dish in the oven for 4 hours.
10 minutes before the end of the cooking time, mix your barbecue sauce ingredients and simmer until they thicken. This should take a few minutes.
Remove your ribs from the oven and crank it to up 225C.
Glaze your ribs with the barbecue sauce and return to the oven for 10-15 minutes once at 225C until slightly brown. This should take 10-15 minutes.
Serve with jacket potatoes, salad and lots of kitchen roll for sticky fingers!
