Apricot Tart

Apricots are so rarely available in HK, but these Israeli ones are in the supermarket RIGHT NOW and perfect for this easy tart made with bought puff pastry (sold pretty much everywhere). The recipe is the same as my previously posted plum tart, but this time using apricots and an apricot jam to glaze. Ideal dessert if you are looking for a fruity finish to your dinner (and even better for breakfast the next day....) But if you'd rather something healthier, you can make a refined sugar free compote from them and have it with Greek yoghurt for brekkie.
